Marrow, Parm & Thyme Compound Butter

This is so quick and easy to make, you’ll never want to serve regular butter with bread again!


4 marrow bones (about 2 inches high)

1/2 cup softened butter

1/4 cup finely grated parmesan cheese

2 teaspoons fresh thyme

1/4 teaspoon salt


Preheat oven to 450°F. Place bones cut side down on a roasting pan, and place in the oven for about 15 minutes, until the marrow looks slightly puffed and is no longer pink. You can insert a metal skewer through the middle, and test the temperature on your wrist (it should be hot), and there should be no resistance as the skewer is inserted. 


Scoop the marrow out, and allow to cool. 


Add butter, marrow, parmesan cheese, and thyme to an electric mixer or food processor. Beat on medium speed until smooth. 


Enjoy right away, or store in the fridge for later.
