Wake up with the warm comfort of these Coconut Miso Oats. Ready in only 10 minutes…a quick and easy nutritious breakfast. Also great for lunch, too!
1.5 cups rolled oats
2 tablespoons coconut oil
3 cups water
2 tablespoons white miso paste
Green onion, sliced
Nori gomasio (see note)
Chopped raw walnuts
Heat oil in a small pot over medim-high heat. Add oats, and stir until lightly toasted (about 3 minutes). Add water and miso paste, increase heat to high, and bring to a boil. Mash up the miso paste with the spoon, to ensure it is mixed in well. Once boiling, reduce to a simmer. Stirring occasionally, continue to simmer until oats have absorbed the moisture (about 5 minutes).
Garnish with toppings and serve hot. Will keep in the fridge for about 3 days, and reheats nicely in the microwave or over the stove (you may just need to add some more water).
Nori gomasio can usually be found in the Asian markets or the Asian section of most grocery stores, or can easily be made in a blender or food processor (check out this recipe here).
